Vegan, sugar & gluten free

Serves: About 5-8 Pancakes (depending on size)

Ingredients
5 (overripe) bananas
1 1/2 cups of buckwheat flour
1/2 cups of (melted) coconut oil
1 tsp cinnamon
2 heaping tbs of cacao
2 tsp of baking powder
1/2 cup almond milk
Optional: fresh mint leaves, berry mix, coconut shreds and coconut milk as topping
Instructions
Peel bananas, break into pieces and add to blender or food processor
Pour almond milk on top of bananas
Add flour, baking powder and spices
Blend until smooth
Heat a skillet or a nonstick pan, and use a little bit of coconut oil or ghee to grease the pan
Poor mixture into pan in small batches and bake until brown
Flip to the other side when little bubbles come onto the surface
Serve with topping of berry mix, coconut shreds, coconut milk and mint
