Nourishing, Protein-Rich Winter Salad

Ingredients

  • 100 gr lamb's lettuce (DE: Feldsalat)

  • 1 full cup Roma or cherry tomatoes

  • Frozen green peas

  • Frozen green beans

  • 1x red onion

  • Edamame spaghetti (I use the bio brand JUST TASTE)

  • Broccoli sprouts (or any other)

  • Chia seeds

  • Hemp seed oil

  • Dried (or fresh) dille

  • Himalayan salt

  • Grounded black pepper

Instructions

  1. Put the green beans and peas together in a medium-sized cooking pan, poor hot water over them and bring to a boil

  2. Let simmer for 3 minutes and add 2 to 3 handfuls of the edamame spaghetti

  3. Let simmer for another couple of minutes, then drain the water

  4. Let the bean mix cool off and add to a bowl

  5. Chop the red onion and tomatoes in small parts

  6. Add the lettuce and chopped parts in the bowl as well

  7. Add the sprouts and the hemp seed oil and mix everything

  8. Add a dash of salt and pepper, mix again

  9. Sprinkle the chia seeds and dried dille on top (in case of fresh dille mix into the salad)
